Lamb Meatballs

These lamb meatballs are easy, smell wonderful, and taste delicious. I baked them but you can boil them in stock or water instead. You won’t get the crisp outer edge that way.

Directions

  1. Preheat the oven to 350F
  2. Combine the spices, salt, slightly beaten egg, and ground lamb. We like to use our stand mixer for this.
  3. Roll into balls about 2 inches in diameter (they will cook down a bit).
  4. Place meatballs on a broiler pan or on a jelly roll pan with a rim so that the fat can drip off without making a mess in your oven.
  5. Bake for 20 minutes, or until their internal temperature reaches 160F. (If you cook them too long they will dry out.)

Serve with tzatziki. This time I made mine with the liquid from fermented garlic instead of using garlic cloves. I also cut the cucumber in very small pieces. Yum!!!
