Rosemary Pot Roast on a Plate

Pot roast is one of the easiest, most satisfying dishes you can make, and the variations are endless.

Last night I decided to make it with a rosemary flavor. Our 4 lb (bone in) roast disappeared in minutes. We were hoping for leftovers, but all we’ve got left now is some of the delicious broth and melted onions! The kids are either headed for a growth spurt, or it really was that good!

  • Pot roast cut of beef
  • 6 Large carrots – other root vegetables are fine – carrots is just what we had on hand. It actually turned out sweeter than I’d like. Peeled turnips or rutabaga would have worked nicely. If you are not on GAPS, potatoes would be fine as well.
  • 3 medium onions
  • 6 cloves garlic
  • 1 cup homemade beef stock
  • 1/2 cup dry red wine – optional – substitute with beef stock if not using wine
  • 3 sprigs fresh rosemary
  • salt
  • ghee

Put ghee in a cast iron skillet, on medium high. Rub salt all over the pot roast. Sear the pot roast in your skillet, about 1 minute on each side. Place pot roast in your crock-pot. (I used our 8 quart, but a 6 quart would have been fine.)

Chop the carrots into pieces 1 inch or larger. Slice 2 of the onions into very thin slices. Slice the third in large chunks. Add these to the crock-pot.

Deglaze the pan you seared the beef in with the red wine or some of the stock. Add this liquid and the stock to the crock-pot.

Add salt and place sprigs of rosemary on top of everything. Put the lid on your crockpot and cook on high for about 4 hours or low heat for about 7 hours. The roast is done when the meat falls easily from the bone and is very tender.

Note: in the early stages of GAPS, caramelized foods are not recommended. You may choose not to sear the meat and deglaze the pan. In that case, just add everything to the crock-pot.
